Parsley is a biennial member of the carrot family originating in the Mediterranean. Although parsley may be best known as a garnish, its unique taste can add to many kinds of recipes as well. The leaves of the parsley plant are bright green and aromatic.
Grow parsley plants in the garden or in containers. Parsley can attract butterflies and bees.
Planting, Growing, and Harvesting:
Plant parsley in rich soil and give it full sun or part shade. Keep the soil moist, but do not overwater. Parsley seeds can be somewhat slow to germinate, so allow a few weeks for them to show up. It can help to soak the seeds prior to planting. Parsley grows up to 18 inches high.
Harvest parsley leaves by cutting the outermost stalks close to the soil. Use the leaves fresh if possible, since they lose a lot of their flavor when dried.
Recipes/How to Use:
Use parsley as a garnish for various recipes. Add to soups, vegetables, and meats for flavor. It can be chewed fresh as a breath freshener.
Roasted Potatoes with Parsley
5-7 small potatoes, quartered
3-4 tablespoons olive oil
1 teaspoon ground pepper
1 teaspoon salt
1 tablespoon chopped parsley, fresh or dried
Preheat oven to 375F. Combine all ingredients in a medium bowl until potatoes are coated. Transfer to a baking sheet or dish and cook for 45-60 minutes, or until potatoes are lightly browned and tender.
