Green Arrow Peas produce slim, long pods that grow to be 4 ½ inches, containing about 10 peas each. These peas are perfect for freezing, and have great taste and nutritional value. This pea does well in cool weather.
Peas are a cool-season crop with three main varieties: garden, snap, and snow (sugar) peas. These easy-to-grow plants add a fresh taste to many dishes. How to eat the pea depends on the type. Garden peas have inedible pods that will need to be removed before you eat the peas. Snap peas can be eaten whole, cylindrical pod and all, and are great raw or cooked. Snow peas are small with sweet, flat, edible pods.
Planting, Growing, and Harvesting:
Pea plants can benefit from some kind of support in the garden, such as a fence or trellis. Direct-sow pea seeds in well-drained soil, in an area with part- to full-sun. Avoid planting peas in a windy location. Do not allow the plants to dry out, but be sure you don’t over-water them. When watering newly-planted seeds, be careful not to wash them away.
Check plants daily about 3 weeks after you see them start blossoming, since you want to pick pea pods in their prime for best taste. You can store fresh peas in the refrigerator, but they are best when used shortly after picking so don’t store for too long.
Recipes/How to Use:
Peas are very versatile and go well with many recipes. Use them in soups, salads, stir-fry, casseroles, and other dishes. Many pea varieties are delicious fresh off the vine for a sweet snack.
Cream Peas & Potatoes
4 or 5 medium red garden potatoes, boiled until firm but tender, then cut up into chunks
1-2 C. fresh or frozen peas
1/2 C. butter (melted)
add 1/4 C. flour – stir with whisk
add 1 1/3 C. milk – a little at a time
add 1/2 tsp salt & few grains pepper
2 tsp red wine vinegar
-Stir sauce until it thickens (don’t let it boil).
-Add fresh or frozen garden peas. If frozen, rinse in hot water until green.
-Add potatoes, mix together.
Stir-fried Snow Peas
1 C. fresh snow peas
1 T. olive or sesame oil
2 cloves garlic, minced
½ tsp. grated ginger
Salt and pepper, to taste
-Heat oil in a pan or wok on medium high heat. Add the fresh peas and stir-fry them in the oil for a couple minutes.
-Add the garlic cloves, ginger, and salt and pepper (if desired), and continue stir-frying for another few minutes, until the snow pea pods look bright green.
