Green Curled Ruffec Endive is a dark-green endive that grows in loose heads. This plant is quite hardy and is resistant to cold. You can use Green Curled Ruffec Endives as greens in a salad, or you can even steam and boil the leaves before eating. If you want to blanche the heart, tie the outer leaves up about 2 weeks before harvesting.

You can start harvesting leaf lettuce when it is young, or wait for larger leaves to develop. You can even eat the thinnings that you pull up in the garden. Trim the outer leaves from the plant and use if you want the lettuce to keep growing, or harvest the entire lettuce plant by pulling or cutting it out of the ground. It is best to harvest before lettuce is overly mature since the taste can become bitter. Head lettuce is ready to harvest once the head has started to form and is large and tightly packed. Use a knife to cut off the lettuce head.

2 C. mixed salad greens
1 C. sprouts of your choice
1-2. carrots, thinly sliced
1 cucumber, sliced
1 celery stalk, chopped
Toss ingredients together and serve with your favorite salad dressing.
