Mammoth Long Island Dill is known to be the best type of dill for pickling. This plant is quick to mature and can be harvested for its seeds and leaves.
Dill is a hardy, tall annual that is a member of the carrot family. It grows easily and has a strong, wonderful aroma. The feathery leaves of the dill plant are great for adding flavor to foods, and the plant itself features lovely yellow flowers that add beauty to the garden.
Planting, Growing, and Harvesting:
Soil that is well-drained and rich in organic matter is best for dill. Make sure the keep soil moist. The plant will need full sunlight and protection from high winds due to its height and delicate stalks. Planting dill in deeply tilled soil can give roots more room to anchor the plant and make it stronger against wind.
The dill plant can grow tall, reaching average height of 36". Because of this, you should plan your garden accordingly and avoid planting dill in a spot where it could block the sun from other plants.
You can harvest both the seeds and leaves of the dill plant. Trim the leaves from the plant throughout the growing season. You can gather seeds of dill plants that have gone to flower once the blooms dry out.

You can use dill for pickling as well as in recipes for meats, potatoes, dips, soups, salads, and more.
Dill Dip
1/2 cup plain yogurt
1/2 cup sour cream
2 green onions, finely chopped
1 teaspoon dill leaves
Dash of garlic powder
Dash of onion powder
Salt and pepper, to taste
-Combine ingredients, mixing well. Use dip with vegetables, chips, or crackers.
