  •  Germination: 12 to 18 days at 55 – 70F. Plant seeds 1/2 inch deep with 2 inches between plants and 18 inches between rows.

Imperator carrots are slender and about 8-9” long. These tender, sweet carrots are very popular due to their great flavor, fine-grained flesh, and beautiful deep-orange color. Imperator does well in light soils.

Planting, Growing, and Harvesting:

Carrots are a cool-weather crop that can make a wonderful addition to your garden. Plant carrot seeds directly into tilled soil in a sunny spot. The soil should be well-drained with plenty of organic matter.

Carrots may be a little tricky when it comes to harvesting, since they grow underground and can’t be seen until you actually pull them up. Check by feeling the top of the carrot through the soil to get an idea of the diameter, then carefully pull if it is as large as you like. You may want to loosen the soil around the carrot before attempting to pull it out to make the task easier.

Carrots store well and can be used in all kinds of recipes.

Recipes/How to Use:

Carrots can be stored in the refrigerator, left in the ground for later use, canned, frozen, or dried. There are many recipes that call for carrots and these vegetables are quite versatile.

Honey Glazed Carrots

2 C. carrots, peeled and cut into small sections (baby carrots also work well)
2 T. honey
1 T. brown sugar
1/2 T. butter
1/2 tsp. lemon juice
dash of ginger

Steam the carrots. In a saucepan, combine honey, brown sugar, butter, lemon juice, and ginger and cook on medium heat until it starts to bubble. Turn off heat. Add carrots and mix well to coat.
