Green Globe Artichoke Seeds

The artichoke is a distinctive plant with a unique appearance and taste, and the Green Globe variety is no exception. This thistle plant produces buds that can be used in a variety of ways, and the plant itself makes a beautiful statement in any garden. With its purple-colored flowers and silvery green leaves, the Green Globe Artichoke is a gorgeous (and delicious!) addition to your garden. These are perennial plants (in milder climates) and can be harvested again and again under the right conditions; they are usually ready to be harvested for the first time in the second year. You may also wish to allow the plants to flower for decorative purposes.

Green Globe Artichokes are an excellent source of potassium, contain fiber and protein, and are low in calories; a large one contains around 60 calories.

Planting, Growing, and Harvesting:

These artichokes prefer to be planted in full sunlight and will grow quickly. Harvest the buds of the plant before they flower, otherwise the artichokes will become inedible. The plants can grow 6’ high and 4’ wide and do best in zones 8-9. Harvest the buds fall through spring. You can store artichokes in the refrigerator for up to two weeks.

Fertilize and keep well-watered. Artichokes need a long frost-free season for best results.

Recipes/How to Use:

There are various ways to prepare the Green Globe Artichoke. You can boil, microwave, can, stuff, steam, or fry artichokes to create delicious dishes. Be sure thorns are removed and stems are discarded before cooking.

Grilled Artichokes

2 artichokes, trimmed

Lemon juice

¾ C. olive oil

4 cloves garlic (chopped)

Salt and pepper

-Cut artichokes in half lengthwise, then place in cold water. Add juice from the lemon to the water to prevent browning.

-Boil water in a large pot and add the artichokes. Cook for about 15 minutes, then drain.

-Add lemon juice (about half a lemon’s worth), olive oil, garlic, and salt and pepper together in a small bowl. Stir together.

-Brush the artichokes with the oil mixture, then place on a preheated grill and cook for about 10 minutes. Keep basting with the oil mixture while grilling.
