The sweetness of the strawberries and the tartness of the rhubarb work well together to create a delicious and easy dessert!
Strawberry Rhubarb Crisp Dessert
4 c. rhubarb, cut into pieces
2 c. fresh strawberries, sliced
1 c. sugar
1 1/3 c. flour, divided
1/2 tsp. cinnamon
1/2 tsp. vanilla extract
1 c. brown sugar
1 c. rolled oats
1/2 c. butter, softened
-Combine the rhubarb, strawberries, sugar, 1/3 cup of the flour, cinnamon, and vanilla in a big bowl. Move this mixture to greased 9 x 13 inch baking dish.
-Combine the remaining 1 cup flour with the brown sugar and oats. Add the soft butter and mix well to make up the topping for the crisp–it should be somewhat crumbly. Sprinkle this mixture over the rhubarb/strawberry mixture and bake it in the oven at 350F for about 40 minutes.
