These root vegetables are easy to grow and tend to be hardy, offering a great source of vitamins and delicious taste without a lot of effort. Planting, Growing, and Harvesting: Carrots are a cool-weather crop that can make a wonderful addition to your garden. Plant carrot seeds directly into tilled soil in a sunny spot. The soil should be well-drained with plenty of organic matter. Carrots may be a little tricky when it comes to harvesting, since they grow underground and can’t be seen until you actually pull them up. Check by feeling the top of the carrot through the soil to get an idea of the diameter, then carefully pull if it is as large as you like. You may want to loosen the soil around the carrot before attempting to pull it out to make the task easier. Carrots store well and can be used in all kinds of recipes. Recipes/How to Use: Carrots can be stored in the refrigerator, left in the ground for later use, canned, frozen, or dried.
