    The refreshing taste and scent of peppermint is easy to recognize, and this type of mint is very popular to grow among gardeners. Peppermint is a perennial that has a tendency to spread. The leaves of the peppermint plant can be used as an ingredient in recipes and can also be made into a tea. Peppermint oil is used in many bath and beauty products and in aromatherapy.

    Planting, Growing, and Harvesting:
    Peppermint can grow up to 2 feet tall and it a hardy plant. Because of its invasive nature, some people recommend container planting to limit peppermint’s growth. It can, however, be grown in your garden as long as you keep it under control. Plant peppermint in part or full sun, and keep soil moist.

    Harvest the leaves of the peppermint plant by snipping them off. Use them fresh or dry them for later use.

    Recipes/How to Use:
    Peppermint is commonly used in all kinds of recipes. Cook it with meats, throw it into salad, or try it in dessert recipes. Peppermint is great for flavoring for tea and other drinks.

    Minty Chocolate Chip Cookies

    2 1/4 C. flour
    ˝ C. fresh mint leaves
    1/2 tsp. baking soda
    1 C. butter (at room temperature)
    3/4 C. granulated sugar
    1 C. brown sugar
    1 tsp. salt
    2 tsp. vanilla extract
    2 eggs
    2 cups chocolate chip morsels

    Directions: 
    -Preheat the oven to 350F. 
    -Using a food processor, combine the mint leaves and sugar until the mint is well chopped.
    -In another bowl, mix the flour, salt, and baking soda together. Set aside.
    -In separate bowl, beat the eggs, sugar/mint mixture, brown sugar, and vanilla extract. Add the 2 eggs and mix well.
    -Add the flour mixture, then stir the chocolate morsels in.
    -Scoop balls of dough onto an ungreased baking sheet and cook for 10-12 minutes (or until cookies are golden brown).
