    Garlic chives are a hardy, grass-like plant with a garlicky taste. Garlic chives will sport large, white blooms starting in late summer. These chives are used often in Asian cuisine, and are also known as Chinese chives or Chinese leeks.

    Chives are both ornamental and useful. A member of the onion family, chives are perfect for adding an onion-like flavor to many kinds of recipes. The blooms of the chive plant are stunning and will definitely add a pop of color to your garden. Chives can also help repel certain pests. The garlic variety is similar to regular chives but has a distinct garlic flavor. It also sports white flowers.

    Planting, Growing, and Harvesting:
    Chives are a perennial plant and tend to be quite hardy. Plant this herb in full sun or part shade in well-drained, fertile soil. You can start chives from seed outside, or transplant them into your garden. Give chives plenty of water until they are established. Chive plants can be divided if needed to reduce crowding problems. The plants will grow up to 12 inches high.

    Keep the garden area free of weeds, since chives don’t do well with the competition. When you are ready to harvest the chives, cut leaves from the outside of the plant with scissors or a knife. You can use the chives fresh or dry them for later use.

    Recipes/How to Use:
    Garlic chives are a great addition to many Asian dishes. Use garlic chives in soups, stir fry, potato recipes, sauces, and more. 

    Chive Potatoes

    Ingredients:
    1 ½ pounds potatoes, cubed
    3 cloves garlic, chopped
    3 ounces cheddar cheese
    ½ cup heavy cream, or milk
    3 tablespoon fresh, chopped chives
    ¼ teaspoon salt
    ¼ teaspoon pepper

    Directions:
    -Boil potatoes in water until they are tender, about 15-20 minutes. Drain. Mash the potatoes, then add remaining ingredients. Mix together until well blended. Serves 6.
