150 to 180 days. Artichokes are generally grown as a perennial in mild areas and as an annual where ground freezes. Space artichoke seeds 4 - 6 feet apart. Grows best in frost-free areas with cool, foggy summers. Keep well watered and fertilize with 15-30-15. In the North, cover and mulch over them. Flower heads develop the second year. Harvest before bracts open. Cut the top one first, then the secondary ones as they mature. Include 1.5 inches of stem with the harvested bud.
