A Refreshing Recipe for July: Summer Fruit Salad

Summer Fruit Salad

2/3 C. orange juice (or pineapple juice)
1/3 C. lemon juice
1/3 C. brown sugar
1 1/2 C. pineapple chunks
1 1/2 C. strawberries, sliced
2 bananas, sliced
1 apple, cut into chunks
2 kiwis, sliced
1 orange, cut into chunks
1 C. grapes
small handful of mint leaves

■ Bring juices and sugar to a boil on med-high heat in a saucepan. Reduce heat and simmer for about 5 minutes. Remove the saucepan from the heat and allow the sauce to cool.
■ Put cut fruit pieces together in a bowl. Drizzle the cooled-off sauce over the fruit, add mint leaves, then mix together gently. Refrigerate for an hour or two, then serve.

Serves about 8
